SIMPLE HEIRLOOM TOMATOES

Makes: 4 servings
2 lbs heirloom tomatoes
¼ cup good olive oil (we mean it, very important)
1 teaspoon Maldon salt
¼ teaspoon freshly ground black pepper
Using the sharpest knife in the drawer, remove the cores from your tomatoes. Cut into bite size pieces—whatever that means to you.
Plate those sweet summer babies with the love and care they deserve. Camera should be at the ready.
Drizzle with about ¼ cup of some quality olive oil. Hit ‘em with a big pinch of Maldon salt, and crack some black pepper on top to finish.
